Week 4 Oysters Festival - Vietnamese style

Oysters Vietnamese Style

Ingredients per 12 oysters

12 fresh rock oysters
I sprig fresh mint
1 sprig fresh coriander
1 shallot
1 red chilli
1 clove garlic
1 pinch sugar
2 tsp teriyaki sauce
1 tsp sesame oil
1 tsp black sesame seeds
1 carrot
2 white radish. (mooli)
1 lime
100 grams’ rock salt 
 
Method:
  • In food processor add the chilli garlic oil, teriyaki and coriander stalks and wiz till smooth
  • Using a toothed peeler shave the carrot and radish into 2cm strips, slice shallots into thin strips and roughly chopped herds and mix together in a bowl.
  • Open the oysters place the shredded vegetable salad over the Oysters.
  • Place oysters on rock salt drizzle with dressing and serve with sprinkle of sesame seeds and a wedge of Lime.
