Ed Baines Wild Seafood Masterclass

Join Ed Baines for a cooking masterclass demonstrating his passion for wild seafood, Thursday 17th October 2019.

Ed has a lifelong love of catching and cooking wild seafood which culminated in the creation of Randall & Aubin 25 years ago. Highlighting oysters from the finest oyster farms to Randall & Aubin’s net to plate fresh fish delivered by Jimmy Buchan – BBC’s trawlerman, plus Peterhead landed squid and monkfish with a twist on flavour combinations that add a luxury element to the simplest of seafood cooking.
Cooking Demonstration & Three-Course Dinner including a welcome glass of Randall & Aubin champagne.

Main: Roast Peterhead Monkfish - with caramelized squid & Orkney Bay mussels, turkey chorizo croquettes, truffle honey & autumn greens
Dessert: Apricot & Almond Tart - with Lejay Lagoute apricot brandy custard
Join Ed Baines for a celebration of Lancashire’s finest at Randall & Aubin Manchester.  As a presenter on ITV’s Britain’s Best Dish for 7 years, Ed learnt a thing or two about British regional cooking and Lancashire has some very special dishes, which, of course, taste best when they are homemade.  Ed will prepare festive dishes using Lancashire’s finest ingredients added to which, for this event only, Ed will spit roast a whole Herdwick lamb.
